That quote exemplifies Amedei’s quest to discover and surprise with the best chocolate possible.  This quest is shared by two siblings, Alessio and Cecilia Tessieri, who founded Amedei in Tuscany, Italy and named the company after their grandmother.  While neither had prior chocolate making experience, they quickly established Amedei as one of the premier gourmet chocolate companies.

 

Do Italians make the World’s Best Dark Chocolate?

No doubt the debate rages on over the best chocolate, but Amedei’s Porcelana and Amedei’s Chuao are clearly among the world’s finest chocolate.  The rest of their line of milk chocolate, white chocolate, truffles, and pralines are also second to none.

Amedei Chuao

Near the Caribbean coast of Venezuela, lays a cacao plantation with a long history of mythical proportions.  The name of the plantation is Chuao, and it produces a legendary cacao bean that shares its name.  Until Amedei came along, the Chuao cacao was exclusively used by French chocolate makers.  But, with a grand dream, dedication, and years of effort, Amedei won exclusive rights to the highly coveted Chuao.   Then after 31 trials and a 20 day waiting period to allow the chocolate to age, the Amedei Chuao chocolate bar was created.  Its taste cascades from an initial burst of plums and red fruits, into a bitter coffee and chocolate flavor which further evolves into a fruity aftertaste that stays in your mouth long after the initial bite is gone. A gourmet delight.

Amedei Porcelana

Amedei’s commitment to use the finest cacao led from the Chuao to the Porcelana.  The Porcelana comes from small plantations in Venezuela and is a genetically pure criollo bean.  Criollo beans are widely considered the highest quality beans available. There are several sub-genres including Ocumare, Porcelana, and Chuao. Unfortunately, supplies of these beans are scarce.  Porcelana (porcelain) beans, from which the bar is made, are among the rarest in the world. The beans are the 1% of Criollo beans that are translucent white, like porcelain.  Amedei can only gather enough Porcelana to make 20,000 individually numbered bars.  The Porcelana is a thrill ride for your taste buds that you won’t want to miss.

As if two great chocolate bars weren’t enough, Amedei recently unveiled the “9”.  Named because it is a proprietary blend of 9 different cacao, Amedei again demonstrates a mastery of fine dark chocolate.  Interestingly, of all their great chocolate bars, Amedei calls the “9” the family treasure.
